Chicken Peach Quesadilla →
This tumblr has quickly turned into a food blog. Oh well. Tried another interesting recipe tonight. Never thought of putting peaches on a quesadilla, bit this was pretty fantastic.

Chicken Avocado Pizza →
Discovered and made another new favorite recipe tonight! Basically, you make a pizza with a purée of avocado, cilantro, lime juice, and salt instead of tomato sauce. And, me being me, I added a jalapeño as well. And I also used pepper jack cheese instead of regular monterey jack. Love that spice! John and I were both huge fans! Will definitely be making this again.

Seven Layer Tortilla Pie →
Tonight’s dinner was a vegetarian recipe (but don’t tell John). :) Delicious with a side of guacamole and jalapeños!

Stuffed Zucchinis →
Dinner tonight! I made it with turkey sausage instead of chicken. Also added fresh jalapeño, as I do with most things I make. Delicious!

Homemade Refried Beans in a Slowcooker →
I made another big batch of one of my favorites today: homemade refried beans in a slow cooker. (On a side note, why does my iPhone always want to autocorrect refried to be capitalized? Strange.) This is the recipe that I use, without much adjustment. I usually just throw in a little extra jalapeño, since we like things hot. When they’re done, I put them in the fridge for a while to...

Chicken Tacos with Mango-Avocado Salsa →
Tried another delicious new recipe for dinner! I only used 2 chicken breasts, but the same amount of spices, and it turned out very hot. Just how we like it! I also added some leftover corn from when we had it on-the-cob the other day, which was a great addition to the salsa! Oh, and we couldn’t help but add a little shredded cheddar cheese on top of the tacos. Creatures of habit. :) This was...

Baked Kale →
Baked Kale looks and sounds pretty disgusting. But oh my gosh, it’s delicious! I found this recipe online and tried it with a little Hot Salt. It really does taste and crunch like potato chips! John and I both loved it. I plan to make some more, trying out different spices. Any recommendations?

Easy Chicken Enchilada Recipe →
I made some chicken enchiladas on Friday, and they were a big hit! I used this recipe, with a couple tweaks. I didn’t have any green onions, and I don’t like black olives, so I omitted them. I added a small can of green chilis in the filling, and added some fresh tomatoes and jalapeños to the top of the enchiladas. Oh, and I used my homemade refried beans instead of canned, which...

Trying for Ten Thirty
It was my goal to be in bed by 10:30 every night this week. I’ve failed day 1, but only by a few minutes. (It’s so lame how I’m always up later on weekdays than weekends. Last Friday, I went to bed at 9:30. Saturday, I passed out - alcohol free, mind you - at 8:30! But on weekdays, it always seems to be at least 11, sometimes 12. Not good for my lazybones in the mornings!)

Alterations Needed →
I just found this fantastic website/blog called Alterations Needed and it has me really inspired! I’m 30 now (getting close to 31 if I’m being honest), and I’ve come to the conclusion that I need to start dressing like it. This website chronicles the fashion adventures of a woman with dimensions almost identical to mine. And I love her style! I’m guilty of filling my...

Unintentional Irony
I just realized the irony of me posting a picture of my fancy red heels and then complaining about the lack of ruby slippers in The Wonderful Wizard of Oz. They really weren’t meant to be related! (I used the right definition of irony here, right?)

Following the Yellow Brick Road
I downloaded a bunch of free classic books on my Kindle last night. There are so many great ones! All the Jane Austen novels, The War of the Worlds, Little Women, even Charles Darwin’s On the Origin of Species. I’m starting with The Wonderful Wizard of Oz, which I’ve never read before. I’m only a couple chapters in, and it’s a good read so far, even though the...

Homemade Refried Beans →
I’m trying my first batch of homemade refried beans today. The weird thing is that it’s cheaper to buy it canned than the dry pinto beans. But I’m expecting it to be mas delicioso. :)

Your Lights Are On!
I took my car in for its annual North Carolina state inspection today so I can renew its registration. As I was driving away afterward, I was startled by the two dumbos who did the inspection, yelling at me about something. I stopped and asked them what was wrong. “Your lights are on!!” they said. “Yeah, I know,” I replied, continuing to drive away. “Wait! Your...
