Chicken Peach Quesadilla →
This tumblr has quickly turned into a food blog. Oh well.
Tried another interesting recipe tonight. Never thought of putting peaches on a quesadilla, bit this was pretty fantastic.
Chicken Avocado Pizza →
Discovered and made another new favorite recipe tonight! Basically, you make a pizza with a purée of avocado, cilantro, lime juice, and salt instead of tomato sauce. And, me being me, I added a jalapeño as well. And I also used pepper jack cheese instead of regular monterey jack. Love that spice!
John and I were both huge fans! Will definitely be making this again.

Homemade Refried Beans in a Slowcooker →
I made another big batch of one of my favorites today: homemade refried beans in a slow cooker. (On a side note, why does my iPhone always want to autocorrect refried to be capitalized? Strange.)

Chicken Tacos with Mango-Avocado Salsa →
Tried another delicious new recipe for dinner! I only used 2 chicken breasts, but the same amount of spices, and it turned out very hot. Just how we like it!
I also added some leftover corn from when we had it on-the-cob the other day, which was a great addition to the salsa! Oh, and we couldn’t help but add a little shredded cheddar cheese on top of the tacos. Creatures of habit. :)

Baked Kale →
Baked Kale looks and sounds pretty disgusting. But oh my gosh, it’s delicious! I found this recipe online and tried it with a little Hot Salt. It really does taste and crunch like potato chips! John and I both loved it. I plan to make some more, trying out different spices. Any recommendations?

Easy Chicken Enchilada Recipe →
I made some chicken enchiladas on Friday, and they were a big hit! I used this recipe, with a couple tweaks.

Trying for Ten Thirty
It was my goal to be in bed by 10:30 every night this week. I’ve failed day 1, but only by a few minutes.
(It’s so lame how I’m always up later on weekdays than weekends. Last Friday, I went to bed at 9:30. Saturday, I passed out - alcohol free, mind you - at 8:30! But on weekdays, it always seems to be at least 11, sometimes 12. Not good for my lazybones in the mornings!)
